You know what happens when you have only been in a grocery store for 3 minutes in almost 2 weeks? A lot of what I’ve been eating the past few days… That’s what happens when you go on vacation and then immediately have to work 7 days in a row. Yuck. Luckily, I’ve got a few things to work with and I haven’t resorted to John’s stash of mac and cheese… yet.
Since today is the start of a holiday weekend we were bussssssy at work, which is always a good thing. Another good thing? The mighty peanut butter and pickle sandwich (honestly)
Be not afraid my friends. This combination is seriously good. I promise.
Another fun thing about today? I got to buy new running shoes! Now, I just got the same ones I had before, but all that cushy new shoe goodness makes my feet VERY excited! I have been feeling twingy in my hips after my last few runs, so I knew the time had come.
Dinner tonight was a repeat of a meal from earlier in the week
Today’s omelet had egg whites, kidney beans, fake bacon, peas and corn (gotta love the freezer), and feta. Some nuked frozen green beans joined in on the fun. Omelets are just too freaking good and oh so easy. I can go from zero to dinner in 6 minutes, which is definitely key when I don’t get home until 8:30!
Two things on a friendship standpoint. On a crazy super sad note, today was my very last coffee date with Averie! I have loved every minute we have spent together these past few months and I know I am going to miss her like whoa! Averie, you have been such an incredible friend and I can’t wait to hear about all of the new and exciting things that are coming your way!

Did I cry this morning in Starbucks? Yup. You are a fantastic mother (I have loved watching Skylar shoot up like a weed and grow into a little lady!), cook (I will miss taste testing!), friend, athlete, and all around human being. Annnnd I will end it at that because I’m starting to tear up!
My other friendship note? One of my most favorite people in the entire universe, Margaret, is making a detour to come stay with my in Phoenix for a few days in July! Why is this so awesome? I haven’t seen her in TWO YEARS! Mar has lived in Argentina since we graduated from college (3 years ago! When did we get old?) and not being able to call and text her whenever I want (which is always) is pretty much the worst.
Mar is my partner in crime (two cross country cycling trips together will do that to you) and I can’t wait for our magical reunion!
“Stoked” would definitely be putting it mildly.
Wow, this post has been all over the place, before I get too rambly it is time for me to hit the hay!







Aw, that’s sad that you’ve only just kind of started meeting up and she has to leave soon! But that is also sooo exciting that your old friend is coming to visit! I’m sure you two will have a blast!

These Averie/Madeline goodbye posts are making me very sad.
I love reading about your meetups because I feel at home. (AZ, duh.) But I’m excited to start reading about San Diego (my second home) so you best be visiting her!
P.S. my neighbor did a presentation in our communications class about how he had a PB sandwich everyday for like 100 days or something, in honor of his grandpa, but each day he had to put something new with the PB, and he said the only one he didn’t really like was pickles and PB. Lol. Now I’m curious! I love both.
